The second dishes 
from zucchini and eggplant
Eggplants cut into circles, salt, after 10-15 minutes. Press to remove the juice, put in a saucepan, pour oil, alternate layers of diced potatoes, rings – sweet pepper, chopped onion, peeled off side veins and chopped green beans, tomato slices, chopped green cilantro, parsley, basil, sprinkle salt, black and red pepper. 
Then put several layers of vegetables and greens in the same sequence, again salt and pour with oil, cover the vegetables with an overturned plate, cover the pan with a lid and, under mild heating, bring it to the oven or on the stove, adding up to 1/2 st. water.

Eggplants 3 pcs., Potatoes 5 pcs., Onions – 2-3 pcs., Vegetable oil 5st. spoons, sweet pepper 4pc., string beans 1 st., tomatoes 3-4 pc., finely chopped spicy herbs 1 st., black and red pepper 1-2 tsp, salt to taste.
